Ingredients:

Roasted Vegetables:

  • 1 head of cauliflower medium
  • 1 can chickpeas, drained and rinsed
  • 1 bunch radishes, washed well
  • ½ cup olive oil
  • 1 tbsp salt
  • ½ tsp paprika
  • ½ tsp turmeric
  • ½ tsp curry powder

Mint Yogurt Sauce:

  • 1 cup plain yogurt
  • 1 handful fresh mint
  • 1 handful fresh cilantro
  • 2 tbsp lemon juice
  • 1 garlic clove
  • ½” fresh ginger
  • pinch of salt
  • 2 tbsp water, if needed

Instructions:

Roasted Vegetables:

  1. Preheat the oven to 400 degrees.
  2. Cut the cauliflower into florets. Cut the radishes into quarters.
  3. Add the olive oil to a bowl along with the spices. Mix to combine.
  4. Spread the cauliflower, radishes, and chickpeas out onto a baking sheet.
  5. Drizzle the spiced oil over the top.
  6. Let the vegetables roast for20-25 minutes until golden and tender-crisp.
  7. Plate onto a platter and drizzle the sauce over the top, or serve in bowls with your favorite base such as rice, quinoa, or mixed greens.

Mint Yogurt Sauce:

  1. Add all of the ingredients for the sauce to a blender and blend until smooth.
