Ingredients:

  • 1 Lemon cut into wedges
  • 1 lb Cod Fillet
  • tbsp Garlic minced
  • 1/4 C Olive Oil
  • 1 tbsp Mediterranean Spice Blend
  • tbsp Butter or Greek Compound Butter
  • tbsp Gluten Free Panko Bread Crumbs
  • 1/2 Tomato small dice

Instructions:

  1. Preheat the oven to 400 degrees. In a small bowl mix the lemon juice, bread crumbs, garlic, olive oil, and medearranean spice blend.
  2. Place the cod into a baking dish and pour the olive oil mixture over the fish. Bake for 15 minutes then remove the cod from the oven and add the diced tomatoes, lemon slices and butter pats. Sprinkle with thyme and oregano.
  3. Bake for another 10 minutes and enjoy!
