Carrot and Ginger Soup

Late fall and early winter is the perfect time for soup! hearty vegetable soup! Make a delicious carrot and ginger soup that is perfect for fall and winter. Plus, it’s easy to make.

Ingredients:

  • 5 big carrots
  • 1 yellow onion
  • 2 tsps of fresh ginger (minced)
  • 3 tbsps butter
  • 2 cups chicken stock
  • 2 cups water
  • whipping cream (fresh)
  • Salt and Pepper to taste

Instructions:

  1. Start by peeling and dicing the carrots, and chopping up the whole onion.
  2. Saute the carrots and onions in butter about 5-8 mins.
  3. Mince the fresh ginger.
  4. Add the water and stock to the pot, cover and simmer for about 20 minutes.
  5. Add it to the blender and pulse until blended.
  6. Before serving, whip up some cream for a nice alternative to sour cream or yogurt.
  7. Add a dash of salt and garnish with fresh chives.
