Oven Roasted Carrot Fries

Here is a delicious and colorful recipe to enjoy Summer side dish with your great healthy meals. 

We made some homemade carrot fries in place of traditional French potato fries. 

The carrot fries crisped up beautifully on the outside and were a perfect texture on the inside. These turned out so great and are a perfect alternative to traditional French fries.

Make a spicy Mayo to dip them in by mixing a little bit of sriracha into the Mayo and the dish will come out outstanding. Try it!! 

Ingredients:

  • 4 large carrots
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • pepper to taste
  • Parsley to garnish

Instructions:

  1. Preheat oven to 425.Wash and peel carrots.
  2. Cut carrots into evenly sized sticks.
  3. In a large bowl toss the carrots with olive oil, salt and pepper.
  4. Arrange carrots on a parchment paper lined baking sheet in a single layer.
  5. Bake for 15 minutes, and then flip and bake for an additional 10-15 minutes.
  6. Garnish with some fresh parsley and serve.
